Recreating memories
Back in the ’90s, we loved going to a local restaurant called Hatfield & McCoy’s. In its heyday, it was a great place with live music while you ate, and we especially loved their hush puppies. The restaurant closed years ago, but we never forgot them. After some experimenting and trying to recreate the flavor we remembered, we came up with this recipe. It’s delicious and brings back a little taste of a restaurant we still miss.
Gathering Your Ingredients
To whip up these crispy treats, you’ll need a handful of common ingredients that you likely already have in your pantry. Here’s what you’ll need:
1 box of Jiffy corn muffin mix
1 egg
1/4 cup self-rising flour
1/4 cup diced sweet onions
1/3 cup buttermilk
1/2 tsp salt
2 tsp sugar
Vegetable oil for frying (2-4 cups if skillet frying)
These simple ingredients combine to create a dough that's easy to form into small balls for frying!
Frying Your Hush Puppies
Now, let’s get to the fun part - frying! Start by heating your vegetable oil in a deep fryer or a skillet. If using a skillet, ensure you have about two inches of oil for best results. While the oil is heating, combine all your ingredients in a large bowl: jiffy cornbread mix, egg, self-rising flour, sweet onion, buttermilk, salt, and sugar. Mix them well until you have a smooth, pliable dough.
Next, take a small ice cream scoop (this will help you form uniform balls) and scoop out the dough, rolling it into spheres about 1 inch in diameter. Carefully place them in the hot oil, making sure not to overcrowd the pot. The hush puppies will flip themselves as they cook, so don’t worry too much about turning them manually.
Fry until they are golden brown, about 2-3 minutes on each side. Once cooked, remove them from the oil and place them on paper towels to drain off any excess grease. And voila! You have made easy hush puppies!
Optional Skillet Instructions
If you don’t have a deep fryer, you can still make these hush puppies in a skillet! Just follow the same preparation steps as mentioned above, but chill the formed balls in the freezer for about 10-15 minutes while you heat the oil in your skillet. This will help them maintain their shape while frying.
Regardless of the method, you end up with delicious hush puppies that are perfect for any occasion. Serve them hot with your favorite dipping sauces, and enjoy the crunchy goodness!
